Coconut Hot Chocolate


2 cans (13.5 oz. each) coconut milk
 ¾ cup brown sugar
 1/8 tsp. salt
 2 tbsps. unsweetened cocoa powder
 1 oz. (about ¼ cup) bittersweet chocolate, finely chopped
 ½ tsp. vanilla extract
 Whipped cream, as desired
 Coconut, as desired
Add first 3 ingredients together in a saucepan, over med. heat. Whisk until sugar dissolves (about 5 min.). Reduce heat, and whisk in cocoa powder and chocolate. Cook, whisking constantly, until the mixture is smooth and thick. Whisk in the vanilla extract. Divide into mugs, and add whipped cream and coconut on top.
Makes 6 servings.
Cooking Time: 20 min.
