Cheesy Cauliflower Soup


1 head cauliflower, broken/cut into florets
1 cup chopped carrots
1 diced onion
3 diced celery stalks
2 cloves minced garlic
4 cups chicken or veg. broth
12 oz. evaporated milk
½ cup milk
Salt and pepper, to taste
1 ½ cups shredded cheddar cheese
shredded cheddar and bacon bits, as desired
Add first 6 ingredients to the crockpot, and cook on low for 4 hrs. (or until veg. are soft). Add both milks; turn the crockpot to high; and cook for 1 hr. Season the soup w/ salt and pepper. Blend w/ a mixer until smooth. Stir in cheese until completely melted, and garnish with extra cheese and bacon bits.
