Gluten Free Gingerbread Cookies


2 ½ cups all-purpose flour
 1 ½ tsp. baking soda
 ½ tsp. salt
 1 tsp. ginger
 1 tsp. cinnamon
 1 cup molasses
 ½ cup shortening
In a lg. bowl, combine first 5 ingredients, and set aside. In a sm. saucepan, over med. heat, combine molasses and shortening. Bring to a boil; remove from heat; and cool to room temp. Combine both mixtures, until a thick dough is formed. Cover and refrigerate 2 hrs. Preheat oven to 375°. Turn dough onto a well-floured surface, and roll out very thin. Cut out shapes w/ cookie cutters; place on cookie sheet; and bake for about 8 min.
