Blueberry Sauce

Standard

½ cup sugar
 1 tbsp. cornstarch
 1/3 cup water
 2 cups blueberries (fresh or frozen)
In a 2 qt. saucepan, bring ingredients to a boil (on med. heat, stirring constantly). Let boil for 1 min., and serve warm or cold over pancakes or waffles.

Chili

Standard

1 lb. ground meat
 1 onion, chopped
 2 (15 oz.) cans kidney or chili beans
 2 (14.5 oz.) cans diced tomatoes
 1 bell pepper, seeded and chopped
 2 cloves minced garlic
 2-3 tbsps. chili powder
 1 tsp. black pepper
 1 tsp. ground cumin
 Salt, to taste
In a lg. skillet, cook meat w/ onion and pepper. When cooked through, drain and place in a crockpot w/ remaining ingredients for 4 hrs. on low.

Butter Bean Soup

Standard

1 ½ cups finely chopped celery
1 cup finely chopped carrots
¾ cup finely chopped onion
3 tbsps. veg. oil
3 tbsps. all-purpose flour
4 cups water
2 (16 oz.) cans butter beans, drained
1 can (14 oz.) diced tomatoes
1 tsp. basil
½ tsp. salt
¼ tsp. pepper
In a lg. pot, cook first 4 ingredients until veggies are soft. Add flour, and cook and stir for 1 min. Add remaining ingredients, and bring to a boil. Reduce heat, and simmer for 20 min. (or until slightly thickened).

Honey Salmon

Standard

o ¼ cup honey
o 3 cloves minced garlic
o 1 tbsp. olive oil
o 1 tbsp. white wine vinegar
o 1 tsp. thyme
o Kosher salt and freshly ground pepper, to taste
o 1.5 lbs. salmon
Preheat oven to 375°. In a sm. bowl, whisk together all but the last ingredient. Place salmon onto a baking sheet lined w/ foil (leaving extra foil to fold over the salmon, and spoon the honey mixture over the salmon. Fold the sides of the foil over the salmon, covering completely to make a sealed packet. Bake for about 20 min., or until flaky.

Autumn Bread

Standard

• 2 eggs
• 2 ripe bananas
• 1 cup brown sugar
• ¼ cup unsweetened apple sauce
• ¼ cup canola oil
• 1 cup sorghum flour
• 1 cup brown rice flour
• 1 ½ tsps. baking powder
• 1 tsp. baking soda
• 1 tsp. xanthan gum
• ¼ tsp. salt
• ½ tsp. ground cinnamon
• 1 cup shredded carrots
• ½ cup raisins
• 1/3 cup chopped walnuts
Preheat oven to 350°. Beat together all ingredients, except for the last 3. Stir in last 3 ingredients. Place in a greased 9×5” loaf pan, and bake for about 1 hr. (or until toothpick inserted near the center comes out clean).
