Autumn Bread

Standard

• 2 eggs
• 2 ripe bananas
• 1 cup brown sugar
• ¼ cup unsweetened apple sauce
• ¼ cup canola oil
• 1 cup sorghum flour
• 1 cup brown rice flour
• 1 ½ tsps. baking powder
• 1 tsp. baking soda
• 1 tsp. xanthan gum
• ¼ tsp. salt
• ½ tsp. ground cinnamon
• 1 cup shredded carrots
• ½ cup raisins
• 1/3 cup chopped walnuts
Preheat oven to 350°. Beat together all ingredients, except for the last 3. Stir in last 3 ingredients. Place in a greased 9×5” loaf pan, and bake for about 1 hr. (or until toothpick inserted near the center comes out clean).
