Grain-Free Coconut Choc. Chip Cookies

  • 5 eggs
  • 1 cup coconut flour
  • ½ tsp. baking powder
  • ¼ tsp. baking soda
  • 1/3 cup sugar
  • 1 tsp. ground cinnamon (optional)
  • ½ cup coconut oil or butter, melted
  • 2 tsps. vanilla extract
  • A bunch of choc. chips (I used semi-sweet)

 

          Preheat oven to 350°.  Mix together all but the last ingredient.  Stir in choc. chips.  Roll med. sized chunks of cookie dough into balls, and place on a cookie sheet lined w/ waxed paper.  Flatten the cookies to about ¼” thick, and seal up the edges to create more cosmetic appeal.  Bake for 13-15 min.
