Gluten Free Sandwich Bread

  • 2 eggs
  • 1 tbsp. active dry yeast
  • 2 tbsps. sugar
  • 1 cup warm milk
  • 3 tbsps. canola oil
  • 1 tsp. cider vinegar
  • 2 ½ cups all-purpose flour
  • 2 ½ tsps. xanthan gum
  • 1 tsp. unflavored gelatin
  • ½ tsp. salt
  •         Combine ingredients in a lg. bowl. Beat on low for 1 min. and then on high for 2 min. Grease and flour a 9” x 5” loaf pan. Transfer the dough into the pan, and smooth the top w/ a wet spatula. Cover and let rise in a warm place until dough reaches the top of the pan (about 20-25 min.). Bake at 375° for 20-30 min., or until golden brown.
