Peanut Butter and Milk Choc. Chip Cookies

  • 2 eggs
  • 2 ¼ cups all-purpose flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 2 sticks butter, softened
  • ¾ cup sugar
  • ¾ cup brown sugar
  • 1 tsp. vanilla extract
  • 11 oz. pkg. peanut butter and milk choc. morsels
  • 1 cup chopped nuts

Preheat oven to 375°. Beat together all but last 2 ingredients. Fold in morsels and nuts. Drop mixture by rounded tablespoonfuls onto ungreased baking sheets, and bake for 9-11 min. Cool for 2 min. before removing from baking sheets.

Caramel Pudding

  • 4 egg yolks
  • 3 cups milk
  • 1 tsp. lemon juice
  • 1 cup brown sugar
  • ¼ cup cornstarch
  • 2 tsps. vanilla extract
  • 2 tbsps. butter
  • ¼ cup water

In a saucepan, bring water, lemon juice, and sugar to a boil on med. heat. Remove pan to cool burner and let sit for 1 min. Stir 2 cups milk into the pan. In a separate bowl, whisk together cornstarch w/ remaining milk until dissolved. Whisk in egg yolks thoroughly, and add this mixture to saucepan. Cook on low until pudding thickens. Remove from heat, and add butter and vanilla.

*This can be eaten warm or cold.

Chocolate Peanut Butter Bites

  • 2/3 cup sweetened condensed milk
  • 1/3 cup creamy peanut butter
  • ½ tsp. vanilla extract
  • 1 cup biscuit/baking mix
  • 1/3 cup semi-sweet choc. chips

Preheat oven to 375°. Beat together all but the last ingredient, just until blended. Fold in the choc. chips. Drop by rounded tablespoonfuls 1” apart onto ungreased baking sheets. Bake for about 8 min., or until edges are lightly browned. Cool for a couple of minutes before moving from baking sheet.

Banana Squares

  • 2 eggs
  • 2/3 cup shortening
  • 1 ½ cups sugar
  • 2-3 med. mashed ripe bananas
  • 1 ½ cups all-purpose flour
  • 1 tsp. baking soda
  • ¼ cup sour milk (Place one tsp. white vinegar in a measuring cup, and add milk to equal ¼ cup)
  • ½ tsp. vanilla extract
  • ½ cup chopped walnuts, optional
  • Whipped cream and sliced bananas, optional

Preheat oven to 350°. Beat together all but last two ingredients. Fold in walnuts, if using them. Pour mixture into a greased 9”x13”x2” baking pan. Bake for about 40 min. Cool completely. If desired, serve with whipped cream and sliced bananas on top.

Speedy Salmon Casserole

  • 1 tbsp. butter
  • 1 tbsp. all-purpose flour
  • 3 tbsps. ketchup
  • ½ cup milk
  • 1 can salmon, drained and deboned
  • 2 cups mashed potato flakes
  • 1 cup shredded cheddar cheese

Preheat oven to 375°. In a saucepan, melt butter over med. heat. Stir in flour, ketchup, and milk until smooth. Bring to a boil, and continue to cook and stir for 2 min. Add salmon. Prepare mashed potatoes according to pkg. directions. Spoon half into a greased casserole dish; top w/ salmon mixture, remaining potatoes, and cheese. Bake uncovered for 15-20 min. or until heated through and cheese is melted.
