- 1 tbsp. butter
- 1 tbsp. all-purpose flour
- 3 tbsps. ketchup
- ½ cup milk
- 1 can salmon, drained and deboned
- 2 cups mashed potato flakes
- 1 cup shredded cheddar cheese
Preheat oven to 375°. In a saucepan, melt butter over med. heat. Stir in flour, ketchup, and milk until smooth. Bring to a boil, and continue to cook and stir for 2 min. Add salmon. Prepare mashed potatoes according to pkg. directions. Spoon half into a greased casserole dish; top w/ salmon mixture, remaining potatoes, and cheese. Bake uncovered for 15-20 min. or until heated through and cheese is melted.
