Caramel Pudding

  • 4 egg yolks
  • 3 cups milk
  • 1 tsp. lemon juice
  • 1 cup brown sugar
  • ¼ cup cornstarch
  • 2 tsps. vanilla extract
  • 2 tbsps. butter
  • ¼ cup water

In a saucepan, bring water, lemon juice, and sugar to a boil on med. heat. Remove pan to cool burner and let sit for 1 min. Stir 2 cups milk into the pan. In a separate bowl, whisk together cornstarch w/ remaining milk until dissolved. Whisk in egg yolks thoroughly, and add this mixture to saucepan. Cook on low until pudding thickens. Remove from heat, and add butter and vanilla.

*This can be eaten warm or cold.
