Buttery Cornbread

  • 2 eggs
  • 1 cup cornmeal
  • 1 cup flour
  • 2 tbsps. sugar
  • 2 tsps. baking powder
  • 1 tsp. salt
  • ¼ tsp. baking soda
  • ½ cup unsalted butter, softened
  • 1 cup buttermilk

Preheat oven to 350°F.   Beat together all ingredients in a mixing bowl, and then pour into a greased 9 x 13” baking dish. Bake for about 25 min., or until a toothpick inserted in the center comes out clean.
