Ethiopian Cabbage Dish

  • 1/3 cup olive oil
  • 4 carrots, sliced
  • 1 onion, sliced
  • 1 tsp. salt
  • ¾ tsp. black pepper
  • 1 tsp. turmeric
  • ½ tsp. ground ginger
  • 1 head of cabbage, sliced
  • 5 red potatoes, cut into sm. bite-sized pieces

Sauté carrots, onion, and oil in a covered stockpot on med. heat.   Stir in the seasonings and cabbage. Cook for 10 min., stirring occasionally. Add potatoes; reduce to med. low heat; and cook for about 40 min. (or until potatoes are soft).
