Black Bean Chocolate Layer Cake

  • 4 eggs
  • 1 can (15.5 oz.) black beans, drained
  • 2 tsps. vanilla extract
  • ¼ cup + 1 tbsp. melted butter or melted coconut oil
  • ½ cup sugar
  • ½ cup cocoa powder
  • ½ tsp. baking soda
  • Pinch of salt

Preheat oven to 350°. Blend together all ingredients in a food processor or blender until smooth. Grease 2 6” round baking pans, and then sprinkle w/ cocoa powder. Divide batter evenly between the 2 pans. Bake 25-30 min. or until a toothpick comes out clean. Cool 5-10 min. in pans, before working a knife around the edges to loosen…and then slowly turning each pan upside down to remove the cakes. Cool completely. Frost and layer the cakes as desired.
