- 1 tbsp. coconut oil
- 1 ½ cups quinoa, rinsed
- 1 (13.5 oz.) can unsweetened coconut milk
- ½ tsp. salt
- 1 ½ cups water
Place oil and quinoa in a med. saucepan on med. heat. Cook about 5 min., or until the quinoa is golden. Add remaining ingredients. Bring to a boil. Reduce heat; cover; and simmer about 20-25 min., or until quinoa is tender and liquid is evaporated. Let sit 10 min.
