Ginger Muffins

  • 1 egg
  • ½ cup veg. oil
  • ¼ cup sugar
  • ¼ cup brown sugar
  • 1 cup molasses
  • 3 cups all-purpose flour
  • 1 ½ tsps. baking soda
  • 1 tsp. ground cinnamon
  • 1 tsp. ground ginger
  • ½ tsp. salt
  • 1 cup water

Preheat oven to 350°. Beat together all ingredients, and fill greased or paper-lined muffin cups evenly. (May be best to try using a jumbo muffin tin, as this batter is enough to make 15-20 reg. sized muffins). Bake for 20-25 min. or until toothpick inserted in center comes out clean.
