Orzo-Tuna Salad Over Tomatoes

  • ¾ cup uncooked orzo
  • 4 lg. tomatoes, sliced
  • Fresh basil leaves, to taste
  • 2 cans tuna, drained
  • 1 mozzarella ball, cubed
  • 3 tbsps. dried basil
  • 2 tbsps. olive oil
  • 2 tbsps. balsamic vinegar
  • 1/8 tsp. salt
  • 1/8 tsp. pepper

Cook pasta according to directions. Arrange tomato slices on serving plate, and top w/ whole basil leaves. Drain pasta; rinse with cold water; and transfer to a mixing bowl. Combine w/ tuna, cheese, and dried basil. In a separate bowl, whisk together oil, vinegar, salt, and pepper. Toss w/ pasta mixture, and spoon finished product over tomatoes.
