Salmon Burgers

Standard
  • 1 lb. skinless, boneless salmon fillets
  • 1 egg
  • 8 herb-seasoned crackers
  • 1 tbsp. Dijon or honey mustard
  • Salt and pepper, to taste

Grind up crackers in the food processor, and then slowly add remaining ingredients until ground and mixed. Shape into patties. Fry in a lg. pan until cooked through. Serve on buns or ciabatta rolls w/ toppings of choice.
