Spinach + Mozzarella Grilled Tomatoes

  • 4 tomatoes, sliced in half (lengthwise) and hollowed out
  • Fresh spinach (stems removed and torn into sm. pieces), to taste
  • Salt, to taste
  • Dried basil or It. Seasoning, to taste
  • Shredded mozz. cheese, to taste

Line a grill pan w/ nonstick foil, and preheat. Lightly salt each tomato half, and sprinkle w/ basil or It. Seasoning. Fill each tomato half w/ spinach, and top w/ cheese. Sprinkle w/ additional basil or It. Seasoning. Grill until cheese is melted and beginning to brown.
