Mushroom “Meat” Balls

  • 2 eggs
  • 3 tbsps. Olive oil
  • 1 med. Onion, chopped
  • 10-20 oz. mushrooms, minced in the food processor
  • 1 cup quick cooking oats
  • 1 cup breadcrumbs
  • ½ cup chopped parsley (optional)
  • 4 cloves minced garlic
  • ½ tsp. dried oregano
  • ½ tsp. dried thyme
  • ¼ tsp. salt
  • ¼ tsp. pepper

In a lg. skillet, sauté onion until tender. Add mushrooms and garlic, and cook on med. High until all liquid is absorbed, and mushrooms are browning. Turn off heat, and set aside to cool some. Mix together all other ingredients, and add mushroom mixture. Refrigerate about 2 hrs. to develop texture. Preheat oven to 400º. Use a cookie scoop to make small balls, and place on greased baking sheet. Bake for about 15 min., and then toss in marinara sauce or over prepared spaghetti.
