Thai Sweet Chili Sauce

  • ¾ cup sugar
  • ¼ cup rice vinegar
  • ¼ cup water
  • 5-6 cloves minced garlic
  • 1 tsp. red pepper flakes
  • ½-1 tsp. Sriracha
  • 1 tbsp. cornstarch
  • 1 tbsp. water
  • ½ tsp. salt

Add 1st 3 ingredients to a pot over med. High heat. When mixture reaches a boil, add the next 2 ingredients. Let simmer for a couple of min., and then add the Sriracha. In a separate bowl, mix 1 tbsp. water and cornstarch until cornstarch dissolves. Bring the sauce in the pan to a low boil, and then add cornstarch mixture and salt. Continue to cook and stir for about 3-5 min., or until mixture reaches desired thickness. Cool the sauce, and use for dipping.
