- 1 chopped onion
- 2 tbsps. Butter
- 2 cups veg. broth
- 1 can (14.5 oz.) diced tomatoes
- 1 can (4 oz.) chopped green chilies
- 1 cup shredded cheddar cheese
In a saucepan, sauté onion in butter until tender. Add all other ingredients, except cheese. Bring to a boil; reduce heat; and simmer for 5 min. Stir in cheese until melted.
