Pierogis

Standard
  • 2 eggs
  • ½ tsp. salt
  • 2 cups flour
  • 2 oz. cream cheese
  • Water, as needed
  • mashed potatoes, onion, etc. for filling

Mix together the ingredients in the food processor, adding warm water as needed. If sticky, add more flour. Work w/ half the dough at a time, rolling as thin as possible. Cut out circles, using a glass. Fill w/ a sm. Amount of filling, being careful not to overflow when folding over and sealing edges. Cook in boiling water in batches so that they do not stick together, for about 3 min. each batch. Remove w/ slotted spoon, and toss w/ butter. You can also add fried onions and serve w/ sour cream.   These can also be fried w/ butter and onions until golden.
