Mason Jar Banana Bread

  • 2 eggs
  • 1/3 cup shortening
  • 1 cup sugar
  • 2 mashed bananas
  • 1/3 cup water
  • 1 ¾ cups all-purpose flour
  • ¼ tsp. baking powder
  • 1 tsp. baking soda
  • ¾ tsp. salt
  • ½ tsp. ground cinnamon
  • ¼ tsp. ground cloves
  • 1/3 cup crushed pecans
  • 6 half-pint mason jars

Preheat oven to 325º. Mix together all ingredients, folding in the pecans. Grease the insides of the mason jars, and spoon in batter until ½ full. Keep the lids off, and place on a baking sheet. Bake for 40-45 min. until a toothpick comes out clean. Screw the lids on the jars as they are cooling so that the jars seal as the bread cools down. These can also be frozen for later use!
