Mexican Cornbread

  • 2 eggs
  • 8 oz. creamed corn
  • ½ cup salsa
  • ½ cup milk
  • 1/8 cup canola oil
  • 1 cup cornmeal
  • 2 tsps. Baking powder
  • ½ tsp. sea salt
  • 2 cups shredded cheddar cheese
  • 1 can (4 oz.) chopped green chiles

Preheat oven to 350º. Mix all ingredients together, and then pour into a greased, 8” or 9” square baking pan. Bake for 45-50 min., or until the top is golden brown. This is great served w/ beans and rice.
