Red Velvet Cupcakes

  • 1 egg
  • 1 ½ cups all-purpose flour
  • 1 cup sugar
  • 1 tbsp. cocoa powder
  • ¼ tsp. salt
  • ½ cup veg. oil
  • ¾ cup buttermilk
  • 1 tbsp. red food coloring
  • 1 tsp. vanilla extract
  • ½ tsp. baking soda
  • ½ tsp. white vinegar

Preheat oven to 350º. Line 12 reg. sized muffin cups. Mix everything together, except the last 2 ingredients. In a sm. Bowl, mix together the baking soda and vinegar. While it is bubbling, add it to the batter. Fill muffin cups about 2/3 of the way full. Bake 25 min., or until toothpick comes out clean.
