Naked Granola

  • 3 cups rolled oats
  • 1 cup coconut flakes
  • 1 tsp. ground cinnamon
  • ¼ tsp. salt
  • 1/3 cup honey
  • ¼ cup boiling water
  • ¼ cup canola oil
  • 1 tsp. vanilla extract

Preheat oven to 300º. Mix together dry ingredients in a lg. bowl. In a sm. Bowl, combine liquid ingredients. Toss w/ the dry ingredients, using a rubber spatula. Place on a greased baking sheet. Bake 15 min., and stir. Bake another 15 min., and stir. Cont. baking in 10-min. increments until granola is golden. Transport to wax paper to cool completely, and store in a tightly sealed container in the fridge or at room temp.
