Polenta w/ Pasta Sauce & Veggies

  • 14.5 oz. veg. broth
  • 1 ½ cups water
  • 1 cup cornmeal
  • 2 tsps. Olive oil
  • 12 oz. assorted, chopped veggies
  • 2 tsps. Minced garlic
  • 2 cups pasta sauce
  • ½ cup grated parm. Cheese
  • ¼ cup chopped basil

Whisk together 1st 3 ingredients in a lg. microwaveable bowl. Cover and cook on high for 5 min. Whisk again, and microwave another 4-5 min., until polenta is very thick. Whisk again; set aside; and keep warm. Meanwhile, fry veggies in oil and garlic for about 5 min. Add the pasta sauce; reduce heat; and simmer for 5-8 min. more until veggies are tender. Spoon polenta on serving plates, and top w/ veg. mixture. Top w/ cheese and basil.
