Ricotta Pancakes

  • 1 egg
  • 4 cups ricotta cheese
  • ¼ cup sugar
  • 1 ¾ cups all-purpose flour, plus more for shaping
  • ½ tsp. baking powder
  • 1 tsp. vanilla extract
  • Jam, for serving

Mix together all ingredients, but the last. Using a cookie scoop, drop balls of the mixture into flour. Coat well, and then shape into a ½” thick patty. “Fry” in a well-greased pan, until brown on each side. Serve w/ jam.
