Crispy Garlic Parmesan Salmon

  • 4 lb. salmon fillet
  • 2/3 cup plain breadcrumbs
  • 2/3 cup grated parm. cheese
  • ¼ cup chopped fresh parsley
  • 4 cloves minced garlic
  • 1/3 cup melted butter
  • Salt and pepper, to taste
  • Lemon wedges, for serving

Preheat oven to 400º. Place the salmon fillet on a nonstick foil-lined baking sheet. Mix together all other ingredients, except the lemon. Spread onto the salmon, and bake for about 30 min. (until crust is golden, and salmon is flaky). Serve w/ the lemon wedges so that lemon juice can be squeezed onto the salmon.
