Tortilla Egg Bake

  • 3 eggs, beaten together w/ some milk and scrambled
  • ¼ tsp. pepper
  • 3 sm. tortillas
  • 1 cup shredded mozz.
  • ½ cup salsa
  • 1 sm. tomato, sliced thin
  • ¼ tsp. dried oregano
  • ¼ tsp. dried parsley

Preheat oven to 350º. Line a 10” cast iron skillet w/ nonstick foil. Place a tortilla on the bottom, and spray w/ cooking spray to avoid drying. Spread ½ the eggs onto the tortilla, and then 1/3 cup of the cheese, and then ¼ cup of the salsa. Repeat these layers, ending w/ a tortilla on top (also coated w/ cooking spray). Sprinkle w/ the remaining 1/3 cup cheese, then tomato slices, and then the last 2 ingredients. Bake 10-15 min., until the stack is heated through w/ melted cheese. Cut into wedges to serve.
