French Onion Stew

  • 2 red onions, cut in ½ and sliced
  • 1 yellow onion, cut in ½ and sliced
  • Olive oil for sautéing
  • 2 cloves minced garlic
  • 1 cup lentils
  • 6 cups veg. broth
  • 1 tsp. fresh thyme
  • Salt & pepper, to taste

  Sautee onions and garlic in olive oil for about 30 min., or until onions are soft andcaramelized.  Add remaining ingredients, and simmer about 1 hr. uncovered (till lentils are fully soft).
