Baked Bean and Cheese Veg. Dogs

  • 6 veg. dogs
  • 6 hot dog buns
  • Baked beans, to taste
  • Yellow mustard, to taste
  • Shredded cheddar cheese, to taste
  • Chopped onions, to taste

Preheat oven to 375º. Line a baking pan w/ nonstick foil, and place hot dog buns inside. Spread a thin layer of mustard inside the bun, and add the veg. dog. Top w/ baked beans, cheese, and onions, making sure that the veg. dogs are arranged so that the buns are not tipping over Bake for 30 min., or until the cheese is melted and veg. dogs are heated through.

Cheese Loaf

  • 1 egg
  • 3 cups flour
  • 1 tbsp. baking powder
  • 1 tsp. salt
  • ¼ tsp. cayenne pepper
  • 1/8 tsp. black pepper
  • 4 oz. cheddar cheese, cut into 1/4” cubes
  • 1 ¼ cups milk
  • ¾ cup sour cream
  • 3 tbsps. Melted butter

Heat oven to 350º. Whisk together all ingredients but the cheese, and then stir in the cheese. Place in a greased, 9×5” loaf pan, and bake for 45 min. Let cool 10 min. and then remove from pan.

Slow Cooker Broccoli Cauliflower Cheese Soup

  • 3 cups chopped broccoli florets
  • 2 cups chopped cauliflower florets
  • 2 cloves minced garlic
  • ½ cup diced shallot
  • 1 lg. diced carrot
  • 3 ½ – 4 cups veg. broth
  • Salt, black pepper, and hot sauce to taste
  • 1 cup milk
  • 8 oz. shredded extra sharp white cheddar cheese
  • 1 cup Greek yogurt

Place all but the last 3 ingredients in the slow cooker. Cook on low for 6-8 hrs., or until veg. are tender. Add remaining ingredients, and puree the soup until smooth.

Broccoli and Cheese Hash Brown Casserole

  • 20 oz. hash browns
  • 1 bag frozen broccoli florets, thawed
  • 2 cups shredded cheese
  • ¼ cup mayonnaise
  • ¼ sweet onion, chopped
  • 2 cloves minced garlic
  • 1 ½ tsps. salt
  • ½ tsp. pepper

Preheat oven to 375°. Mix everything together, except for 1 cup of cheese. Press mixture into a 9” pie pan, and top w/ remaining cheese. Cover, and bake for 45 min. Uncover, and bake an additional 10-15 min. or until cheese is starting to brown.

 

Cheesy Cauliflower Soup

1 head cauliflower, broken/cut into florets
1 cup chopped carrots
1 diced onion
3 diced celery stalks
2 cloves minced garlic
4 cups chicken or veg. broth
12 oz. evaporated milk
½ cup milk
Salt and pepper, to taste
1 ½ cups shredded cheddar cheese
shredded cheddar and bacon bits, as desired
Add first 6 ingredients to the crockpot, and cook on low for 4 hrs. (or until veg. are soft). Add both milks; turn the crockpot to high; and cook for 1 hr. Season the soup w/ salt and pepper. Blend w/ a mixer until smooth. Stir in cheese until completely melted, and garnish with extra cheese and bacon bits.
