Captain Crunch Granola

  • 1 egg white, beaten
  • 3 cups old-fashioned oats
  • 1 ½ cups chopped nuts
  • 1 ½ cups shredded coconut
  • ½ cup agave nectar
  • ¼ cup olive oil or melted coconut oil
  • ¼ cup sesame seeds
  • 2 tbsps. brown sugar
  • ½ tsp. salt
  • ½ tsp. cinnamon
  • 2 cups dried cherries or cranberries

Preheat oven to 300º. Combine all ingredients but the last, and spread in a rimmed baking sheet. Bake, stirring every 10 min., for about 40-45 min. (until golden and dry). Stir in last ingredient, and spread onto waxed paper to cool.


Naked Granola

  • 3 cups rolled oats
  • 1 cup coconut flakes
  • 1 tsp. ground cinnamon
  • ¼ tsp. salt
  • 1/3 cup honey
  • ¼ cup boiling water
  • ¼ cup canola oil
  • 1 tsp. vanilla extract

Preheat oven to 300º. Mix together dry ingredients in a lg. bowl. In a sm. Bowl, combine liquid ingredients. Toss w/ the dry ingredients, using a rubber spatula. Place on a greased baking sheet. Bake 15 min., and stir. Bake another 15 min., and stir. Cont. baking in 10-min. increments until granola is golden. Transport to wax paper to cool completely, and store in a tightly sealed container in the fridge or at room temp.

Peanut Butter Granola


4 tbsps. creamy peanut butter
 4 tbsps. honey
 ½ tsp. cinnamon
 ½ tsp. vanilla extract
 2 cups oats
Preheat oven to 325°. Combine first 2 ingredients in a bowl, and microwave until peanut butter melts (about 20 seconds). Stir the mixture, and combine with remaining ingredients. Spread onto greased cookie sheet, and bake for 8 min. (when granola is slightly browned). Let cool until granola is crunchy. This can be eaten as a snack, over yogurt, or as a cereal w/ milk.
