Eggnog Pancakes

Standard
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 tbsp. baking powder
  • ½ tsp. salt
  • ¼ tsp. nutmeg
  • 2 cups eggnog
  • ¼ cup veg. or canola oil
  • Maple syrup, for serving

Heat and grease griddle. Combine all but the last ingredient, and pour batter into desired sized pancakes. Flip when bubbly, until each side is golden. Serve w/ syrup.

Chocolate Chip Oatmeal Cookie Pancakes

  • 2 eggs
  • 1 cup old-fashioned oats
  • 1 cup all-purpose flour
  • ½ cup brown sugar
  • 2 tsps. Baking powder
  • ½ tsp. baking soda
  • 1 tsp. ground cinnamon
  • ¼ cup chopped nuts
  • ¾ cup sour cream
  • ¾ cup milk
  • 1 tsp. vanilla
  • 2 mashed, ripe bananas
  • ¾ cup choc. chips
  • ¼ stick melted butter

Whisk together all ingredients, as you preheat a greased griddle. Spoon circles of batter onto the griddle, and flip when bubbling. The pancakes should be golden on both sides.

Ricotta Pancakes

Standard
  • 1 egg
  • 4 cups ricotta cheese
  • ¼ cup sugar
  • 1 ¾ cups all-purpose flour, plus more for shaping
  • ½ tsp. baking powder
  • 1 tsp. vanilla extract
  • Jam, for serving

Mix together all ingredients, but the last. Using a cookie scoop, drop balls of the mixture into flour. Coat well, and then shape into a ½” thick patty. “Fry” in a well-greased pan, until brown on each side. Serve w/ jam.

“Oreo” Pancakes

  • 1 egg
  • 1 cup all-purpose flour
  • 1 tbsp. sugar
  • 2 tsps. baking powder
  • 1 cup milk
  • 3 tbsps. veg. oil
  • Dash of vanilla
  • 6 “Oreo” style cookies, broken up in a food processor

“Oreo” Glaze:

  • ¾ cup powdered sugar
  • 2 tbsps. milk
  • 2 “Oreo” style cookies, broken up in a food processor

          Preheat a greased griddle to 350°. Whisk together all pancake ingredients, and then pour into individual circles onto the hot griddle. When bubbly, flip the pancakes. When the pancakes seem solid and a bit darkened, they are done. Mix the “Oreo” glaze together, and spoon over finished pancakes on plates.

Choc. Chip Peanut Butter Pancakes

Standard
  • 1 egg
  • 1 cup all-purpose flour
  • 2 tsps. baking powder
  • ¼ tsp. salt
  • 2 tbsps. sugar
  • 1 cup milk
  • ¼ cup peanut butter
  • 1/3 cup choc. chips
  • Melted peanut butter, for topping
  • Additional choc. chips, for topping

Spray a griddle w/ cooking spray and preheat to 350°. Whisk together all but the last 2 ingredients. Pour batter onto griddle, in medium sized circles. Flip when bubbly, and then remove when both sides are golden. Top pancakes w/ drizzles of melted peanut butter, and sprinkle w/ additional choc. chips.
