Peanut Butter Sheet Cake

Cake:

  • ½ cup buttermilk
  • 2 eggs
  • 2 cups all-purpose flour
  • 2 cups sugar
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • 1 ½ sticks butter
  • 1 cup water
  • ½ cup peanut butter
  • ¼ cup veg. oil
  • 1 tsp. vanilla extract

Frosting:

  • 2 sticks butter, softened
  • ¾ cup peanut butter
  • 3 cups powdered sugar
  • 4 tbsps. Milk
  • 2 tbsps. Instant vanilla pudding mix

Preheat oven to 350̊.  Melt butter w/ water in med. Saucepan, bringing to a simmer.  Whisk in peanut butter and veg. oil.  In a separate bowl, mix together remaining cake ingredients. Add warm mixture, and pour into a greased 10x15x1” pan.  Bake for 26 min., or until toothpick comes out clean.  Cool.  Beat together all frosting ingredients, and spread over the cake.  Store in the fridge.

Peanut Butter Choc. Chip Cookies

  • 1 egg
  • 1 stick butter, softened
  • ¾ cup peanut butter
  • ½ cup sugar
  • ½ cup brown sugar or ¼ cup honey
  • ½ tsp. baking soda
  • ½ tsp. baking powder
  • ½ tsp. vanilla
  • 1 ¼ cups all-purpose flour
  • ½-1tbsp. milk
  • 1 cup semi-sweet choc. chips

Preheat oven to 375º.  Beat together all, but the last, ingredient.  Stir in choc. chips.  Drop dough by cookie scoopfuls onto greased cookie sheets.  Bake for 7-9 min., until bottoms are light brown.

Peanut Butter Bars

Bars:

  • 1 egg
  • ½ cup softened butter
  • ½ cup sugar
  • ½ cup brown sugar
  • ½ tsp. vanilla extract
  • 1/3 cup peanut butter
  • 1 cup flour
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • 1 cup rolled oats
  • 1 cup choc. chips

Glaze:

  • ½ cup peanut butter
  • 1 cup powdered sugar
  • 6 tbsps. Milk

Preheat oven to 350º. Mix together all, but the last, bar ingredients, and spread in a greased 9×13” baking dish. Sprinkle w/ choc. chips. Bake for 20-22 min., and then let cool for 5 min. While the bars are cooling, beat together the glaze ingredients. Spread over warm bars, and then let cool completely before cutting.
