Spaghetti Squash w/ Pesto

  • 1 spaghetti squash, scooped and cooked
  • 3 tomatoes, diced
  • ½ cup pesto

Mix all ingredients together. Microwave to heat through before serving.

Tomato Basil Spaghetti Squash Bake

  • ½ spaghetti squash, scooped out and cooked
  • 2 tbsps. Olive oil
  • 2 cloves minced garlic
  • Sliced fresh basil leaves, to taste
  • Salt and pepper, to taste
  • ¼ cup grated parm.
  • 1 sliced tomato
  • Shredded mozzarella, to taste
  • Balsamic glaze, to drizzle and serve with

Preheat oven to 375º. In a mixing bowl, combine spaghetti squash, oil, garlic, basil, salt and pepper, and parm. Spread into a greased 8×8” casserole dish. Layd tomato slices on top, and season the tomatoes w/ salt and pepper. Sprinkle w/ mozz. Cheese and additional parm. Bake 15-20 min., or until cheese is beginning to brown. You may drizzle with balsamic glaze, if desired.

Spaghetti Squash Hash Browns

  1. ½ med., pre-cooked spaghetti squash
  2. 1 egg
  3. ¼ cup chives
  4. ¼ tsp. garlic powder
  5. Salt and pepper, to taste
  6. ½ cup cheddar cheese

Remove the spaghetti squash from its shell, and pat dry w/ a towel to remove access moisture. Place in a lg. mixing bowl, and add all but the last ingredient. In a lg. skillet, fry the mixture over med. heat. Stir and flip for about 10 min. until it is golden brown. Top w/ cheese.

Spaghetti Squash w/ Jalapeno Cream

  • 1 spaghetti squash, cooked and removed from the shell
  • 2 cups milk
  • 2 jalapenos, seeded and chopped
  • 2 tbsps. butter
  • 3 tbsps. flour
  • 1 tsp. salt
  • 1 cup shredded cheese

          Preheat oven to 375°. In a med. saucepan over med. heat, warm the milk and jalapenos until bubbles begin to form along the edge of the pan. Remove from heat, and let sit for 15 min. Strain and discard the jalapenos. In another med. saucepan, melt the butter. Whisk in flour and salt, and cook while whisking about 3 min. Whisk in the jalapeno milk; reduce heat; and continue to whisk for about 3 more min. (or until mixture begins to thicken). Combine with squash, and transfer the mixture to a greased 2 qt. dish. Sprinkle cheese on top, and bake for about 30 min. (or until cheese has browned).
