Tomato & Corn Soup

Standard
  • 1 (10 oz.) can diced tomatoes
  • 1 (15 oz.) can creamed corn
  • 1 cup milk
  • 1 finely chopped onion
  • 3 cloves minced garlic
  • 2 tbsps. olive oil
  • Salt & pepper, to taste

Sauté onion and garlic in oil until the onion is translucent. Add remaining ingredients. Heat through.

Tomato and Basil Soup

  • 1 tbsp. canola oil
  • 1 ½ diced white onions
  • 3 tbsps. Minced garlic
  • 3 cups tomatoes, roughly chopped
  • 28 oz. (3 ½ cups) veg. broth
  • 1 can tomato paste
  • 3 tbsps. Chopped fresh basil
  • Salt and pepper, to taste
  • 1 ½ tbsps. Lemon juice

Sauté onions and garlic in canola oil until onions are transparent. Add remaining ingredients; bring to a boil; and then simmer for 15-20 min. until tomatoes are softened. Blend until smooth.

Tomato Basil Spaghetti Squash Bake

  • ½ spaghetti squash, scooped out and cooked
  • 2 tbsps. Olive oil
  • 2 cloves minced garlic
  • Sliced fresh basil leaves, to taste
  • Salt and pepper, to taste
  • ¼ cup grated parm.
  • 1 sliced tomato
  • Shredded mozzarella, to taste
  • Balsamic glaze, to drizzle and serve with

Preheat oven to 375º. In a mixing bowl, combine spaghetti squash, oil, garlic, basil, salt and pepper, and parm. Spread into a greased 8×8” casserole dish. Layd tomato slices on top, and season the tomatoes w/ salt and pepper. Sprinkle w/ mozz. Cheese and additional parm. Bake 15-20 min., or until cheese is beginning to brown. You may drizzle with balsamic glaze, if desired.

Tomato and Onion Salad

Standard
  • 2 fresh tomatoes, sliced into wedges
  • 1 sweet onion, cut into thin wedges
  • Chopped fresh cilantro, to taste
  • Dressing:
  • ¼ cup red wine vinegar
  • ¼ cup water
  • 1 tbsp. olive oil
  • ½ tsp. salt
  • Freshly ground black pepper, to taste

Add salad ingredients to a serving bowl, and then mix together all dressing ingredients in a sm. Separate bowl. Pour dressing over salad, and chill for at least 10 min. before serving.

Tomato and Goat Cheese Toast

Standard

Desired number of pieces of thickly sliced bread
 Feta cheese
 Tomato
 Olive oil
 Minced garlic
 Salt and pepper
Preheat oven to 450°. Lightly brush each side of bread w/ olive oil. Add some minced garlic on top, a layer of feta cheese, and sliced tomato. Brush tops of tomatoes w/ some additional olive oil. Bake for 7-10 min., or until bread is toasted.
